Histamine intolerance

Histamine is a molecule present in blood, skin and mucous membranes, very important in the defense against external agents. This molecule is also present in food. Histamine is metabolized in the small intestine by the enzyme DAO. If there is a deficit of this enzyme, histamnia not metabolized well, accumulates and causes various symptoms such as itching, urticara, diarrhea or even migraines.   The histamine intolerance is not a true allergy. There is no reaction, the body simply can not catabolize histamine obtained. This is found in red wine, aged cheese, sausages, tomatoes and sauerkraut and, above all, in the tuna. When an affected ingested some of these foods are podruce enteral histaminosis.
